QUICK RECIPE OVERVIEW

Why you’ll love them

  • These easy, no-bake bites come together in minutes with simple, wholesome ingredients. They're naturally sweetened with dates and offer a delicious combination of fiber, healthy fats, and rich chocolate flavor.

What Makes Them So Flavorful?

Medjool dates create a soft, fudgy texture, while cacao and dark chocolate bring a rich chocolate flavor. Walnuts add a buttery nuttiness, and coconut and vanilla round everything out with a touch of sweetness.

Helpful Tips

  • Adjust the texture: If the mixture is too dry, add 1–2 teaspoons of water and pulse again. If too sticky, refrigerate briefly before rolling.

  • Make them extra chocolatey: Roll in a light dusting of cacao powder or drizzle with melted dark chocolate.

  • Switch up the nuts: Try pecans or a combination of walnuts and almonds.

  • Storage: Store in an airtight container in the refrigerator for up to 1 week or freeze for up to 3 months.

Nourish & Rooted Tip: Keep a batch in the fridge for those moments when you're craving something chocolatey. They're a delicious little treat made with ingredients that bring both flavor and nourishment to every bite!

Chocolate Brownie Balls

MAKES

About 14–16 bites

Ingredients:

  • 1 cup pitted Medjool dates (about 10 dates)

  • 1½ cups raw walnut halves

  • ¼ cup unsweetened cacao powder

  • 1 teaspoon pure vanilla extract

  • ¼ cup unsweetened coconut flakes

  • 2 tablespoons ground flaxseed

  • ¼ cup dark chocolate chips

Instructions:

  1. Soak dates in warm water for 5 minutes to soften, then drain well.

  2. Pulse walnuts in a food processor until finely chopped.

  3. Add dates, cacao powder, vanilla, coconut, and flaxseed. Process until the mixture becomes sticky and holds together when pressed.

  4. Add chocolate chips and pulse a few times to combine.

  5. Scoop and roll into approximately 1½–2 tablespoon balls. Refrigerate for 20–30 minutes to firm up.

Recipe Notes

  • Dates: Soft Medjool dates work best for that rich, fudgy texture. If your dates are already moist and soft, you can skip soaking.

  • Texture Tip: If the mixture is too dry, add 1–2 teaspoons of water and pulse again. If too sticky, chill briefly before rolling.

  • Make Them Your Own: Add a pinch of sea salt to enhance the chocolate flavor, or roll in cacao powder, finely chopped walnuts, or shredded coconut.

  • Storage: Keep in an airtight container in the refrigerator for up to 1 week or freeze for up to 3 months.

Nourish & Rooted Tip: Make a batch ahead of time and keep them chilled for an easy grab-and-go snack or a little something sweet after dinner.
