QUICK RECIPE OVERVIEW

Why you’ll love them

  • These easy, no-bake bites are made with simple, wholesome ingredients and offer a satisfying combination of fiber, healthy fats, and natural sweetness. They're perfect for meal prep, an afternoon pick-me-up, or a little something sweet.

What Makes Them So Flavorful?

Medjool dates create a soft, fudgy texture, while cacao and dark chocolate bring a rich chocolate flavor. Walnuts add a buttery nuttiness, and coconut and vanilla round everything out with a touch of sweetness.

Helpful Tips

  • Soften the dates: If your dates are firm or dry, soak in warm water for 5–10 minutes and drain well before processing.

  • Adjust the texture: If the mixture is too dry, add 1–2 teaspoons of water and pulse again. If too sticky, refrigerate briefly before rolling.

  • Choose quality matcha: Culinary-grade matcha works well for recipes and adds a beautiful natural green color.

  • Make them your own: Roll in extra shredded coconut or a light dusting of matcha instead of chopped pistachios.

Matcha Pistachio Energy Balls

MAKES

About 14–16 bites

Ingredients:

  • ¾ cup raw cashews

  • ¼ cup raw shelled pistachios

  • 12 pitted Medjool dates

  • ¼ cup unsweetened shredded coconut

  • 2 teaspoons matcha powder

  • 1 tablespoon coconut oil, melted

  • ¼ cup finely chopped pistachios, for rolling

Instructions:

  1. Process the nuts: Add cashews and ¼ cup pistachios to a food processor. Pulse until finely chopped.

  2. Make the mixture: Add dates, shredded coconut, matcha, and coconut oil. Process until sticky and the mixture holds together when pressed.

  3. Roll into balls: Scoop about 1 heaping tablespoon of mixture and roll between your hands.

  4. Coat: Roll each ball in finely chopped pistachios, pressing gently to help them stick.

  5. Chill: Refrigerate for 20–30 minutes to firm up before serving.

Recipe Notes

  • Storage: Keep in an airtight container in the refrigerator for up to 1 week or freeze for up to 3 months.

  • Make Ahead: Prepare a batch at the beginning of the week for a convenient grab-and-go snack.

  • A Little Matcha Note: Matcha naturally contains caffeine, so these bites provide a small amount, depending on the matcha used.

Nourish & Rooted Tip: Keep a few in the fridge for a naturally sweet afternoon pick-me-up. They're a delicious way to enjoy matcha beyond your morning latte!
