What Makes Them So Flavorful?
Blended cottage cheese creates a smooth, creamy texture, while shredded cheese, garlic, and colorful vegetables add savory flavor to every bite.
Helpful Tips
Finely chop vegetables and cook off excess moisture from watery mix-ins, such as mushrooms or zucchini. Use a silicone muffin pan for easy removal, and avoid overbaking to keep the egg bites soft and tender.
Cottage Cheese Egg Bites
FLUFFY · SAVORY · CREAMY12 EGG BITES | PREP 10 MINUTES | COOK 20-22 MINUTES
Ingredients:
8 large eggs
1 cup cottage cheese (2% or full-fat)
½ cup shredded cheddar or mozzarella
1 cup finely chopped vegetables (such as baby spinach, bell peppers, or lightly steamed broccoli)
¼ teaspoon sea salt
¼ teaspoon freshly ground black pepper
¼ teaspoon garlic powder
¼ teaspoon onion powder
Olive oil or avocado oil, for greasing the pan
Method:
Preheat to 350°F and lightly grease a silicone muffin pan or a well-greased nonstick muffin pan.
Add the eggs, cottage cheese, salt, pepper, garlic powder, and onion powder to a blender. Blend for 20–30 seconds until smooth and creamy.
Divide the chopped vegetables and shredded cheese evenly among the 12 muffin cups. Pour the egg mixture over the fillings, filling each cup about ¾ full. Gently stir with a spoon to distribute the ingredients.
Bake for 18–22 minutes, or until the centers are just set and no longer jiggly. The egg bites should reach an internal temperature of 160°F.
Let cool in the pan for 5 minutes before gently removing. Enjoy warm or refrigerate for easy breakfasts throughout the week.
Recipe Notes
Favorite Combinations: Try spinach and feta, broccoli and cheddar, bell pepper and mozzarella, or mushroom and Gruyère.
Extra-Creamy Texture: Blend the cottage cheese and eggs until completely smooth. This gives the egg bites their soft, tender texture without noticeable cottage cheese curds.
Egg White Option: Replace the 8 whole eggs with approximately 1½ cups liquid egg whites. The texture will be slightly firmer and less rich.
Vegetable Tip: Sauté mushrooms, zucchini, and other moisture-rich vegetables before adding. Cool and drain any excess liquid to prevent watery egg bites.
Storage: Refrigerate cooled egg bites in an airtight container for up to 4 days.
Freezer-Friendly: Freeze cooled egg bites in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator. They may release a little moisture when reheated.
Reheating: Microwave for 20–30 seconds at a time until warmed through, or reheat gently in a 300°F oven.
Nourish & Rooted Tip: Make two different flavor combinations in the same muffin pan to add variety throughout the week. Pair a few egg bites with fresh berries and whole-grain gluten-free toast for an easy, balanced breakfast.
