QUICK RECIPE OVERVIEW
Why you’ll love it
This versatile dressing comes together in minutes with a few pantry staples. It's rich and creamy without any dairy, and a simple drizzle can turn everyday ingredients into something delicious.
What Makes It So Flavorful?
Tahini adds a rich, nutty base, while fresh lemon and Dijon mustard bring brightness and tang. Garlic adds a savory kick, and a touch of honey balances the flavors.
Helpful Tips
Stir tahini well before measuring, as the natural oils tend to separate.
Add cold water gradually until you reach your preferred consistency.
Taste before serving. A little extra lemon brightens the flavor, while honey softens the tang.

Ingredients:
¼ cup tahini
¼ cup extra-virgin olive oil
2–3 tablespoons fresh lemon juice
2 teaspoons Dijon mustard
1–2 teaspoons honey or maple syrup
1 garlic clove, finely minced
¼ teaspoon sea salt
Freshly ground black pepper, to taste
2–3 tablespoons cold water, as needed to thin
Method:
Combine Ingredients: In a small bowl or jar, whisk together the tahini, olive oil, lemon juice, Dijon mustard, honey, garlic, salt, and pepper until smooth.
Adjust Consistency: Gradually whisk in cold water, 1 tablespoon at a time, until creamy and pourable.
Taste & Adjust: Add more lemon juice, honey, or salt to suit your taste.
Serve: Drizzle over salads, grain bowls, or roasted vegetables.
Recipe Notes
Tahini Tip: The dressing may thicken at first when water is added. Keep whisking and adding a little water until smooth.
Make It Your Own: Use honey for a softer sweetness or maple syrup for a vegan option.
Serving Ideas: Especially delicious with roasted sweet potatoes, chickpeas, quinoa bowls, grilled chicken, or crunchy cabbage salads.
Storage: Refrigerate in an airtight jar for up to 4–5 days.
Before Serving: Dressing thickens when chilled. Stir well and add a splash of cold water to loosen as needed.
