What Makes It So Flavorful?

Olive oil, white wine vinegar, fresh garlic, and Italian herbs create a savory, tangy flavor with a subtle kick from red pepper flakes.

4 SERVINGS | PREP 10 MINUTES | MARINATE 1-8 HOURS

Ingredients:

  • ¼ cup extra-virgin olive oil

  • 2 tablespoons white wine vinegar

  • 2 teaspoons dried Italian seasoning

  • 2 garlic cloves, minced

  • ½ teaspoon red pepper flakes, optional

  • ½ teaspoon sea salt

Method:

  1. Prepare the marinade. Whisk all ingredients together in a small bowl until well combined.

  2. Add the chicken. Place 1 pound of boneless skinless chicken breasts(about 2 medium chicken breasts), in a glass container or resealable food-safe bag. Pour the marinade over the chicken, turning to coat evenly.

  3. Marinate. Cover and refrigerate for 1–8 hours.

  4. Cook the chicken. Remove chicken from the marinade, allowing the excess to drip off. Discard the used marinade. Grill, bake, or cook in a skillet until the thickest part reaches an internal temperature of 165°F.

  5. Allow chicken to rest for 5 minutes before slicing to help retain its juices.

Recipe Notes

  • Serving Ideas: Delicious with roasted zucchini, cherry tomatoes, quinoa, or fresh Mediterranean-inspired salads.

  • Fresh Herb Option: Replace the dried Italian seasoning with 2 tablespoons finely chopped fresh Italian herbs, such as basil, oregano, parsley, and thyme.

  • Flavor Variations: Add 1 teaspoon Dijon mustard for extra tang or a little fresh lemon zest for a brighter finish.
