Helpful Tips
Let the ground beef brown before stirring too much to develop deeper flavor. For the freshest texture, keep the raw vegetables and kimchi separate until you're ready to assemble your bowls.
Korean Beef Bowl
SAVORY · COLORFUL · UMAMI-RICH4 SERVINGS | PREP 15-20 MINUTES | COOK 15 MINUTES
Ingredients:
For the Korean-Inspired Beef
1 pound lean grass-fed ground beef
2 tablespoons low-sodium gluten-free tamari or coconut aminos
3 garlic cloves, minced
2 tablespoons freshly grated ginger
2 tablespoons rice vinegar
1 teaspoon maple syrup
1 tablespoon toasted sesame oil
⅛ teaspoon crushed red pepper flakes (optional)
1 cup chopped scallions, divided
For the Bowls
2 cups cooked brown rice or quinoa (or cauliflower rice)
1 cup shredded carrots
1 medium cucumber, diced
1 cup shelled edamame, cooked
1 cup baby spinach or other leafy greens
1 cup kimchi, naturally fermented
1–2 teaspoons sesame seeds, for garnish
Optional: gluten-free gochujang sauce or sriracha, for serving
Method:
Prepare the sauce. In a small bowl, whisk together the tamari, rice vinegar, honey, ginger, sesame oil, and red pepper flakes. Set aside.
Brown the beef. Heat a large skillet over medium-high heat. Add the ground beef and cook for 5–7 minutes, breaking it into small crumbles, until nicely browned and fully cooked.
Add the aromatics. Reduce heat to medium. Stir in the minced garlic and about ¾ cup of the chopped scallions. Cook for 30–60 seconds, until fragrant.
Pour the prepared sauce over the beef and stir to coat evenly. Cook for another 1–2 minutes, allowing the sauce to lightly reduce and soak into the meat.
Prepare the bowls. Divide the cooked rice or quinoa among four serving bowls. Arrange the shredded carrots, diced cucumber, edamame, spinach, and kimchi.
Assemble and serve. Spoon the warm ginger-garlic beef into the center of each bowl. Sprinkle with the remaining scallions and sesame seeds. Add a drizzle of gluten-free gochujang or sriracha.
Recipe Notes
Grain Options: Brown rice adds a nutty flavor and chewy texture, while quinoa provides additional protein and fiber. For a lighter option, substitute cauliflower rice or combine it with brown rice.
Kimchi: Traditionally fermented kimchi adds a wonderful tangy flavor and may provide live beneficial bacteria. Choose refrigerated, unpasteurized kimchi with live cultures if you want those benefits, and add it just before serving rather than heating it.
Vegetable Variations: Try shredded red cabbage, sautéed mushrooms, steamed broccoli, or thinly sliced radishes for extra color and crunch.
Protein Variations: Substitute ground turkey or chicken for the beef. Add a little olive oil to the skillet if needed to prevent sticking.
Meal Prep: Prepare the beef, grains, and edamame ahead of time. Keep the cucumber, carrots, kimchi, and sauce separate until serving so everything stays crisp and fresh.
Storage: Refrigerate the cooked beef and grains in airtight containers for up to 3–4 days. Keep the fresh toppings separate and assemble just before serving.
