QUICK RECIPE OVERVIEW

Why you’ll love it

  • A simple way to add delicious crunch, healthy fats, and a little extra plant-based protein to everyday meals. Just a few minutes in a skillet transforms basic pantry ingredients into a flavorful topping.

What Makes It So Flavorful?

Toasted pumpkin seeds bring a rich, nutty flavor, while golden panko adds a delicate crispness. Fresh lemon zest, oregano, and garlic give the mixture a bright, Mediterranean-inspired finish.

Helpful Tips

  • Keep the heat moderate and stir frequently to prevent the seeds and breadcrumbs from burning. Add the lemon zest toward the end of cooking to preserve its fresh citrus aroma.

Lemon Herb Seed Crunch

TOASTY · LEMONY · CRISPY

ABOUT 8 SERVINGS | PREP 5 MINUTES | COOK 3-5 MINUTES

Ingredients:

  • 1 tablespoon extra-virgin olive oil

  • ½ cup raw pumpkin seeds (pepitas)

  • ½ cup gluten-free panko breadcrumbs

  • ¼ teaspoon garlic powder

  • ¼ teaspoon crushed red pepper flakes (optional)

  • ¼ teaspoon dried oregano

  • 2 teaspoons finely grated fresh lemon zest

  • Pinch of sea salt

Method:

  1. Line a large plate or small baking sheet with parchment paper and set aside.

  2. Heat the olive oil in a large skillet over medium-low heat. Add the pumpkin seeds and toast for 1–2 minutes, stirring frequently, until lightly toasted and fragrant.

    3. Stir in the panko and a pinch of sea salt. Cook for another 1–2 minutes, stirring often, until the breadcrumbs turn lightly golden and crisp.

    4. Reduce the heat to low. Stir in the garlic powder, red pepper flakes, oregano, and fresh lemon zest. Cook for 30–60 seconds, stirring continuously until fragrant.

    5. Immediately transfer the mixture to the prepared parchment paper and spread into an even layer. Allow to cool completely before serving or storing.

Recipe Notes

  • Serving Ideas: Sprinkle over Mediterranean salads, quinoa bowls, roasted cauliflower, grilled chicken, or hummus bowls.

  • Flavor Variations: Add a pinch of dried thyme or a little extra lemon zest for a brighter herb flavor.

  • Meal Prep: Make a batch ahead and keep it separate from dressings and moist ingredients. Add just before serving to preserve its crunch.

  • Storage: Because this recipe contains fresh lemon zest, refrigerate in an airtight container for up to 5–7 days. If needed, refresh in a dry skillet over low heat and cool before serving.

  • Try this over your Mediterranean Chicken Quinoa Bowl with Hummus & Roasted Vegetables (see recipe ↗). The lemony crunch is especially delicious against creamy hummus and tender roasted vegetables.
