What Makes Them So Flavorful?

Helpful Tips

Ingredients:
1 (15-ounce) can chickpeas, rinsed and drained
1 tablespoon extra-virgin olive oil
1 teaspoon smoked paprika
½ teaspoon garlic powder
½ teaspoon sea salt, or to taste
¼ teaspoon freshly ground black pepper
Pinch of ground cumin or chili powder (optional)
Method:
Preheat oven to 425°F and line a large baking sheet with parchment paper.
Drain and rinse the chickpeas, then spread on a clean kitchen towel. Pat thoroughly dry, removing any loose skins.
Toss the chickpeas with olive oil and salt, then spread in a single layer on the prepared baking sheet.
Roast for 25–35 minutes, shaking the pan halfway through, until golden, crisp, and lightly browned.
While still warm, toss with smoked paprika, garlic powder, black pepper, and cumin or chili powder, if using.
Let cool briefly before enjoying, or allow to cool completely before storing.
Recipe Notes
For Maximum Crunch: Dry the chickpeas completely and remove any loose skins before roasting. Moisture prevents them from crisping properly.
Spice Variations: Add chili powder and cumin for a Southwest-inspired version, or dried oregano and lemon zest for a Mediterranean twist.
Serving Ideas: Sprinkle over chopped salads, roasted vegetables, soups, or your Mediterranean Chicken Quinoa Bowl with Hummus & Roasted Vegetables (see recipe ↗).
Meal Prep: Roast ahead and keep separate from salads, dressings, and other moist ingredients. Add just before serving to preserve their crunch.
Storage: Best enjoyed the day they're made. Once completely cooled, store loosely covered at room temperature for up to 2 days. They will gradually soften.
Refresh the Crunch: Spread leftover chickpeas on a baking sheet and warm at 400°F for 5–8 minutes, watching closely. Cool slightly before serving.
