QUICK RECIPE OVERVIEW

Why you’ll love it

  • A fresh, no-cook salsa that's a little heartier than traditional pico de gallo, thanks to fiber-rich black beans and sweet corn. Easy to prepare and versatile enough for dipping or topping your favorite meals.

What Makes It So Flavorful?

Ripe tomatoes and sweet corn balance the tang of fresh lime, while cilantro, red onion, and jalapeño add a lively, savory finish.

Helpful Tips

  • Choose ripe but firm Roma tomatoes and remove excess seeds and juice to prevent watery salsa. Let the mixture rest for 10–15 minutes before serving to allow the flavors to come together.

  • 2 tablespoons finely diced red onion

  • ½ jalapeño, seeded and finely diced

  • ½ cup finely chopped fresh cilantro

  • ¼ cup black beans, rinsed and drained

  • ¼ cup organic sweet corn

  • Freshly ground black pepper, to taste

Method:

  2. In a medium bowl, gently toss together the tomatoes, red onion, jalapeño, cilantro, black beans, and corn.

  4. Let the salsa sit for 10–15 minutes to develop its flavor. Taste, adjust seasonings, and serve.

Recipe Notes

  • Best Tomatoes: Roma tomatoes are ideal because they're firm and contain fewer seeds, helping the salsa maintain its chunky texture.

  • Avocado Variation: Gently fold in 1 diced ripe avocado just before serving for a creamy addition that pairs beautifully with the fresh tomatoes, lime, and cilantro.

  • Corn Options: Use fresh cooked corn, thawed frozen corn, or drained canned corn. For a slightly smoky flavor, lightly char the corn in a skillet before adding.

  • Serving Ideas: Delicious with gluten-free tortilla chips, grilled chicken, fish tacos, or Black Bean Burgers (see recipe ↗).

  • Meal Prep: Chop and combine the ingredients a day ahead. Refrigerate separately from other meal components and stir before serving.

  • Storage: Refrigerate in an airtight container for up to 2–3 days. Drain excess liquid if needed before serving.
