QUICK RECIPE OVERVIEW

Why you’ll love it

  • A fresh, naturally colorful dressing that transforms simple greens and vegetables with its smooth texture and bright flavor. The carrots add natural sweetness and body without needing a creamy base.

What Makes It So Flavorful?

Fresh ginger brings a warm, peppery kick, while carrots add earthy sweetness. Rice vinegar and lime provide tanginess, balanced by savory tamari and a hint of toasted sesame oil.

Helpful Tips

  • Blend Until Smooth: A high-speed blender creates the creamiest texture.

  • Adjust the Consistency: Add cold water, 1 tablespoon at a time, until easily pourable.

  • Use Fresh Carrots: Peel and finely chop or grate the carrots so they blend easily.

  • ¼ cup extra-virgin olive oil

  • 3 tablespoons rice vinegar

  • 1 tablespoon freshly grated ginger

  • 1 tablespoon fresh lime juice

  • 1 tablespoon low-sodium gluten-free tamari or coconut aminos

  • 2 teaspoons honey or pure maple syrup

  • 1 teaspoon toasted sesame oil

  • 1 small garlic clove

  • 2–4 tablespoons cold water, to thin as needed

Method:

  1. Peel and chop the carrot and grate the fresh ginger.

  2. Add all ingredients, starting with 2 tablespoons water, to a high-speed blender. Blend until smooth and creamy.

  3. Add more water as needed for a pourable consistency. Taste and adjust sweetness or acidity as desired.

Recipe Notes

  • Ginger Flavor: Add another 1 teaspoon freshly grated ginger for a stronger, spicier kick.

  • Tamari vs. Coconut Aminos: Tamari adds savory depth, while coconut aminos offer a milder, slightly sweeter flavor.

  • Consistency: For a thinner, lighter dressing, blend in additional water until desired consistency.

  • Serving Ideas: Delicious over Asian-inspired cabbage salads, leafy greens, edamame bowls, grilled chicken, or roasted vegetables.

  • Meal Prep & Storage: Refrigerate in an airtight glass jar for up to 3–4 days. Shake or stir well before serving.
